Add olive oil to a stock pot along with diced onion, red pepper and sauté until soft.
Add minced garlic, Italian seasoning, salt and pepper and sauté until fragrant, about 2 minutes. Then place onto a plate.
Add ground beef to same pot and brown.
Once meat is brown and grease is drained, add back in veggies along with marinara sauce, broth and cottage cheese. Stir to combine.
After it comes to a soft boil, put in broken pieces of lasagna noodles and cook just until al dente (6-8 minutes).
Lastly, put in chopped spinach and cook until wilted.
Before serving, top with Parmesan cheese.
