Lasagna Soup

Lasagna Soup is a warm dish that transforms the classic flavors of lasagna into a comforting bowl of soup. Cottage Cheese makes this a creamy, higher protein soup that will do a good job of filling your families' bellies while being nutritious!
Servings: 4 people

Ingredients

  • 1 Tbsp Olive oil
  • ½ Onion diced
  • 1 Red bell pepper diced
  • 3 Garlic minced
  • 1 Tbsp Italian seasoning
  • 1 lb Ground beef or sausage
  • 2 cups Marinara sauce
  • 4 cups Chicken broth
  • 1 cup Cottage cheese
  • 7 Sheets of lasagna noodles
  • Salt and pepper to taste
  • Parmesan

Instructions

  • Add olive oil to a stock pot along with diced onion, red pepper and sauté until soft.
  • Add minced garlic, Italian seasoning, salt and pepper and sauté until fragrant, about 2 minutes. Then place onto a plate.
  • Add ground beef to same pot and brown.
  • Once meat is brown and grease is drained, add back in veggies along with marinara sauce, broth and cottage cheese. Stir to combine.
  • After it comes to a soft boil, put in broken pieces of lasagna noodles and cook just until al dente (6-8 minutes).
  • Lastly, put in chopped spinach and cook until wilted.
  • Before serving, top with Parmesan cheese.
