How to make Lasagna Soup
In a soup pot, add a little olive oil along with diced onion and red pepper.
Once veggies are soft, add minced garlic, Italian seasoning, and salt and pepper. Sauté for a couple minutes until aromatic then place on a place.
In the same pan, brown meat.
Once meat is brown and grease is drained, add veggies back into pot along with marinara sauce, broth and cottage cheese.
Bring to a soft boil.
Add broken pieces of pasta and cook until al dente (6-8 minutes).
Finish with chopped spinach and cook until wilted.
Top with cheese and serve!

- 4 cups Chicken broth
- 1 cup Cottage cheese
- 7 Sheets of lasagna noodles
- Salt and pepper to taste

Instructions

- Add minced garlic, Italian seasoning, salt and pepper and sauté until fragrant, about 2 minutes. Then place onto a plate.
- Add ground beef to same pot and brown.
- Once meat is brown and grease is drained, add back in veggies along with marinara sauce, broth and cottage cheese. Stir to combine.
- After it comes to a soft boil, put in broken pieces of lasagna noodles and cook just until al dente (6-8 minutes).
- Lastly, put in chopped spinach and cook until wilted.
- Before serving, top with Parmesan cheese.
